Toadstool Linzer Cookies.

I saw this in my timeline on Instagram and I knew I had to make these with my kids. We had a lot of fun with it. I have diagnosed ocd and sometimes it’s hard for me to sit back and let the kids do their thing without me intervening. I let myself know there would be mess and the cookies wouldn’t be perfect, but the memories would be. I didn’t even cry over spilled milk, and yes I did spill milk during the tasting process.


Ingredients List

• ¾ cup butter (softened)

• ¾ cup granulated sugar

• 2 eggs

• 3 teaspoon vanilla extract

• ½ teaspoon salt

• 2¼ teaspoon baking powder

• 2¼ cups all-purpose flour

• Strawberry Jam (you can substitute any jam you’d like)


🍄 Directions 🍄

• In a large bowl, cream together butter and sugar.

• Mix in eggs and vanilla until combined.

• Add salt, baking powder and flour and mix until well incorporated.

• Cover dough bowl with plastic wrap and chill in the refrigerator for one hour.

• Preheat oven to 350°F.

• Line a baking sheet with parchment paper or a silicone baking mat.

• Use a cookie cutter to cut out your mushroom shapes. I bought this one here!

• Use a knife to make a cutout the inside of the top of each mushroom (photos below).

• Place the cutout cookie on top of the whole cookie, pinch together.

• Fill the cutout with your choice of jam.

• Roll little balls of extra cookie dough and place them on top of the jam.

• Bake for 8-10 minutes, or until slightly golden brown on the bottom.

• Let cool completely.

• Enjoy!
